Horseradish Adds Some Kick

The use and appreciation of horseradish dates back to Greek mythology. The Oracle at Delphi said of horseradish that: “the radish is worth its weight in lead, beets are worth their weight in silver and the horseradish is worth its weight in gold.” I have yet to see horseradish in any fine jewelry stores, or any full-page advertisements for it in magazines. Nevertheless, millions of gallons of horseradish are prepared annually. This root is neither related to horses or radishes per se. The horseradish is from the mustard family and is simply a popular seasoning for a variety of foods.
