Wild Desert Lime Pie Recipe

1 x 220g sweet flan case

30ml water

120g sugar

50g cornflour

1 ½ cup Wild Australian Desert Lime

30g butter

3 egg yolks (egg whites can be frozen for another day)

Whiz desert limes in blender.

Preheat oven to 180c. Place flan on oven tray and bake for 10-15 mins.

Place the water and sugar in a pan, bring to the boil then add diluted cornflour and reboil while mixing. Remove from the heat. Add limes, mix with butter and yolks. Pour into the prepared flan case and smooth flat. Place flan in the oven at 165c to set the filling.

Serve with cream or icecream.
