The roasting of skewered meat on a spit, revolving over a flame or heat source is known as rotisserie cooking. The meat is cooked evenly, in its own juices and allows for easy basting.

There are many tasty recipes available for skewered meat, fish and vegetables.

Rotisserie cooking is practiced in many countries around the world including Turkey, Greece, Mexico, The Middle East and here in the USA.
