How To Make Delicious Beef Olives

Before we begin, I should point out that beef olives is a recipe that actually contains no olives at all, so don’t worry if you aren’t fond of the Mediterranean delicacy. What you do need for the first part of this recipe is, 1 shallot, 3 rashers of bacon, four mushrooms, a couple of thyme leaves, a clove of garlic and one tablespoon of olive oil. Take all of these ingredients and dice and crush where appropriate, before placing into a gently heated frying pan with the olive oil and saute off. This will make the basis of the stuffing for your beef olives.

For the next part of the recipe you will need half a kilo of beef (any cut is fine), 1 tablespoon of mustard, a couple of sticks of celery, a couple of carrots, a small glass of red wine (preferably merlot or cabernet sauvignon), a small amount of tomato puree, half a litre of beef stock and another tablespoon of olive oil. Take your beef and portion it out into thin slices then smear with mustard. Then wrap your beef up into parcels before securing with string and place in the oven at 175 Celsius. Next up, take the stuffing you prepared earlier and smother the cuts of beef with it liberally. Take the vegetables and roughly chop them up, before browning lightly in a frying pan together with the beef stock. Pour the vegetables from this pan into the baking tray containing your beef olives and let the vegetables roast gently alongside the beef. This will enhance the flavor of your beef olives significantly and provide a great stock for you to make gravy with to go with your beef olives.

Remember this well; beef olives don’t actually contain any olives. Your dinner guests may be a little disappointed with this (until they taste them!), so offer some delicious Italian olives as an aperitif. After forty minutes of cooking time, remove your beef olives from the oven and allow to rest. Serve with roast potatoes, rich gravy and broccoli florets for a truly sumptuous meal. To add a little extravagance to the whole proceedings, a large glass of cabernet sauvignon should compliment your beef olives very well, enhancing the flavor even more and giving you a great excuse to enjoy a little drink as a reward for your endeavors.

barbeque? If your answer is, “It’s a barbeque, just like any other barbeque, except that they barbeque kosher meat, and all the other food is strictly kosher as well” — well clearly you haven’t yet heard of the ASBEE World Kosher BBQ Championship.

The event held Memphis, Tennessee, has been held every year now for over two decades. The “ASBEE” part of the title of this event stands for Anshei Sphard – Beth El Emeth, the synagogue that organized it and lays claim to the title of “the oldest Jewish Orthodox congregation in the mid-South.”

According to its website, the synagogue happens to be located in “a city where treif BBQ restaurants far outnumber synagogues,” the annual competition was created as “an alternative to the long-standing Memphis BBQ contest of the swine variety.” The site further proudly states that in 2010, “the festival hosted 40 teams and over 3000 attendees.”

Now that we’ve mentioned teams, we should explain that contest rules call for a team of judges who award 1st, 2nd, and 3rd place titles to the teams serving up the best beef brisket, the best beef ribs, and the best beans – and we haven’t even mentioned that there’s also pickle-eating contest; and, of course, since it’s a festival, there are a lot of fun activities such as a balloon artist and a petting zoo for the kiddies.

It sounds like a lot of fun, but if Memphis is too far away for you to join in, maybe this idea might inspire you to organize your own festive kosher BBQ. Of course, unless you’re already familiar with this aspect of the art of kosher cooking you’ll need to learn how to barbeque kosher meat. It’s not difficult, it just takes a little practice.

Delicious sauces and marinades go hand-in-hand with the barbeque process, and you’ll find dozens of kosher recipes for them in cookbooks or on the Internet.

Halloween Meatloaf Mice

No Halloween party would be complete without some delicious food that is also on topic. You’ve decorated the house with cobwebs and spiders, mom has her Heidi costume and dad has decided he needs a polar bear costume!) but what is everybody going to eat?

Well, Meatloaf Mice are great, delicious and wonderful for Halloween. Here’s how to make them:

  1. Grab some ground beef, catsup, uncooked spaghetti (and some spaghetti sauce), onions, carrots, turkey, raisins, oatmeal, salt, pepper.
  2. Cut the carrot horizontally (these will be mouse ears!) and vertically (the mouse tail, of course!) and steam them until tender.
  3. The meatloaf goes on a baking sheet and then mix the rest of the ingredients. Shape into a mice-shape and place in the oven for about forty five minutes.
  4. Remove from oven and cut small slits to poke in the ears and tail (carrot, remember?).
  5. The spaghetti noodles will form the nose/whiskers.
  6. Finally, pour over the spaghetti sauce

You need enough heat to cook the meat (which is the difference between smoke curing and barbecuing) but you need to keep the temperature a bit above the level that meat will register inside when done.

So, let’s take pork for example; it needs to be cooked to an internal temperature of at least 160 degrees Fahrenheit, so you must barbecue it at 180 degrees to 220 degrees Fahrenheit. This same principle works very well for other foods as well.

Tear off a piece of aluminum foil about 15 inches long or so. Lay it on the counter so it’s flat. No, it doesn’t make any difference which side is up as there’s no truth to the myth that things cook faster with the dull side out.

Take about 1/2 pound of hamburger and make it into a patty right in the center of the tin foil. Salt and pepper the meat. Now peel one medium large potato and slice it about as thick as two credit cards or 1/8th inch thick slices.
