One of my favorite foods is an Ehthiopian dish called Doro Wat. It is a spicy chicken dish that is made with a paste called Berbere’. This dish is a great international meal to spice up any typical Wednesday night. The dish includes tomato and wine and can be made very easily. So put on a little music, open the wine, get out some African American Art and make some Doro Wat for dinner.

Any visitor to Maine wants to try the lobster there and Maryland restaurants serve up a tasty crab. Traditions have been taken and adapted to US tastes and recipes have been invented on American soil but which reflect the cuisine of other countries. Even the hot dog and hamburger, so associated with the USA, has its origins in Germany. Southern cuisine is distinctive from the rest of the country with its Creole, Cajun and soul food dishes. There are regional differences within the South too with Louisiana being noted for its French influences and its hot sauces. Texas is known for its barbecue sauces and Oklahoma for its bean based dishes. North and South Carolina use rice a lot in their food. A typical Southern breakfast would consist of bacon, grits and pancakes and any trip to the South would bring the smell of fried chicken.

Food is tasty and tends to be spicy and has its own distinctive Asian flavors. Rice and rice noodles are staples and fish is extremely popular. Thai food is often flavored with chilies, lime juice, lemon grass and fish sauce. There is an Indian and Chinese influence and curries and stir fries are much in evidence. For the less adventurous, well known fast food chains have branches here. Street food stalls are a good way of trying out different snacks and there are several Internet cafes in the towns. Vegetarians on Thailand holidays manage very well here.

It is inexpensive to move around the islands by bus or taxis and food in cafes and restaurants tends to be cheap too. There is an Indian influence that means lots of curries are available and there is plenty Chinese cuisine. Fish and chips are very popular, especially with the many Australian travelers. Japanese and Korean dishes are popular too along with eateries serving local seafood. Fijian meat dishes are usually pork or lamb. Farmers Markets are a good place to buy locally grown bananas, papayas, breadfruit, mangoes and other tropical fruit. The local drink on the Fiji Islands is an alcoholic drink made from peppers called Kava, which is very spicy.

The two Italian girls were quite competitive when it came to putting together a meal. The result or this was that the rest of us were treated to outstanding dishes. The problem is that people are not very well educated about what natural herbal remedies are safe and what aren’t. The land is suited to the rearing of sheep and goats, rather than beef and so goat meat and lamb are much more common. Locally caught fish take up much of Greek menus, especially in coastal areas. There is also an emphasis on fresh vegetables in Greek recipes, the most popular being green beans, okra, eggplant, tomatoes, and onions. Yogurt is another favorite and there are numerous types of honey available. A lot of honey varieties come from fruit trees such as lemon and orange. The combination of yogurt and honey is sometimes served as a dessert.
