Chocolate Brownies

When I make chocolate brownies at home I never include nuts. Even though my husband would likely to put them in, I simply cannot stand them within a brownie. I am open to putting other things in brownies however, and one of my most favorite additions is peanut butter. Other times, we like to make double chocolate brownies, or perhaps just make a double batch so that they are thick and chewy.

There are some recipes for cookies that have many ingredients for energy including oatmeal, peanut butter and honey, and then there are the standard chocolate chip cookies recipes. I have combined the two and added a few touches of my own to create a cookie that is very tasty as well as packed with energy producing ingredients.

I’ve eaten so much of it, it is probably flowing through my veins - not that I mind in the least. My mother prepared mainly comfort foods. These were the foods that my father preferred. Her specialties were pot roast, baked chicken, wonderful gravy and chocolate fudge. After many years of trying I have finally mastered making gravy that is as smooth and rich as my mother’s. I have not been able to duplicate the chocolate fudge. No matter how many times I try my mother recipe it seems that the texture is never right. Her chocolate fudge recipe includes boiling the ingredients and then beating the fudge by hand until it thickens. I have watched her do this hundreds of times, yet I cannot master the timing.

There are many variations on the classic chocolate brownie recipe. Chocolate chips, white chocolate chips, carob chips or peanut butter chips make a richer tasting brownie, especially popular with kids and chocolate fiends. Peanut butter chips produce a chocolate brownie with a creamier taste. When using peanut butter chips, you’ll need to decrease the baking time by a few minutes. There are also dark chocolate bars with a high cocoa content (up to 70%) that are velvety smooth and rich. Just break a 100-gram bar into small chunks and stir into the batter before baking. Walnuts or pecans are good in holiday brownies, as are marshmallow cremes.

The problem with cooking with a lot of hot pepper sauces is that your friends have to like them. This isn’t a problem with most things. If you like to use a lot of salt, you can use less salt when you have friends over who like it less. If you like to use a lot of onions, you can prepare onions with a side dish and leave them out of the main course. But if you like to use hot pepper sauce, it needs to go on everything. Spicy cooking works as a system. You can’t just take the spice out of the dish and expect it to taste good. You are leaving out an essential ingredient, and the flavor will suffer. Of course, people who don’t like hot pepper sauce don’t know very much about flavor. I haven’t met a single person who doesn’t like hot pepper sauce and has an interesting pallet. Most of them like the basics: meat and potatoes. If your friends fit into this category, they might not even notice the dish is not right!
