If you want to know how to cook, I highly recommend buying The Joy of Cooking and a smaller recipe book. The Joy of Cooking will tell you everything about how to make food. It has thousands upon thousands of recipes, as well as basic instructions for things like how to cook rice, how to boil an egg, how to prepare fish, etc. The smaller recipe book will come in handy as well. You see, The Joy of Cooking is rather large and intimidating. A smaller recipe book, especially one chock-full of pretty pictures of the food, will help you actually get started while you are still too scared to open up that Joy of Cooking.

The other day I went through my cookbooks, to see if I could weed some out, because I have too many to mention. It’s hard getting rid of a cookbook, especially one with a few recipes in it that you’ve come to love. But I’ve scanned the recipes I need to keep forever into my MacBook. However, there were an even dozen I couldn’t part with. These are books I turn to time and time again, even though I consider myself somewhat of a gourmet chef. Morgan Freeman’s COOKING FOR A CAUSE was one of the books I kept. Not only does Mr. Freeman’s book help out the people of Grenada, who suffered during Hurricane Ivan, but it can help you out in the kitchen as well. Friday last I made the “Classic Conch Ceviche the Cayman Way” which you can find on page 47. It was delicious. I’ve also done the “Arroz Con Pollo” a Cuban dish from the Kitchen of Daisy’s Grandmother.” And that’s the rub, is this classic Caribbean food or is it another book of recipes from fancy restaurants. Does it matter? The recipes make delicious meals with a distinct Caribbean flavor, which makes Mr. Freeman’s book fit in nicely with my dozen Caribbean keeper cookbooks. And I have to give Mr. Freeman a hand for doing something for the people of Grenada. I was hunkered down in Trinidad, thanking Neptune the hurricane didn’t come for me. But it’s sad it went for others. This is a good cookbook, one which will help you turn out delicious meals, plus it’s for a great cause. Two thumbs up.Anyone could find it on amazon.Cook for a good cause.

Delicious Atkins Recipes: Taco Salad & Cranberry Salad

Cool Taco Salad CarbsPerServing:?
Prep Time:15 min Effort:Easy
Ingredients:
1 lb ground beef 1 can diced tomatoes
1 package taco seasoning (follow directions for taco seasoning)
½ cup sour cream ½ cup salsa
as much lettuce you need for the salad vegtables to your liking for the salad
shredded cheese
How to Prepare:
add ground beef and diced tomatoes to skilet after browning meat add
taco seasoning (follow water requirements on back of seasoning
package) after meat is cooked drain set aside.
Combine lettuce and your choice of vegtables your salad bowl add
meat to top sprinkle with shredded cheese and add sour cream and
salsa for your dressing.
Cranberry Salad Serves:8
CarbsPerServing:6.125g Effort:Easy
Ingredients:
1 can crushed unsweetened pineapple – (9-oz.) juice packed 1 sugar-free cherry gelatin –
(.3-oz.)
1 tablespoon lemon juice ¼ cup artificial sweetener1 cup fresh cranberries – chopped fine
1 small orange – peeled, quartered and chopped small 1 cup celery – chopped
½ cup pecans – or other nuts, optional
How to Prepare:
Drain pineapple and save juice. Set pineapple aside for later use.
2. Combine pineapple juice with water to equal 2 cups liquid.
Prepare gelatin according to package label using juice-water mixture
for the liquid.
3. Once gelatin is dissolved, stir in lemon juice. Chill until
partially set.
4. In a separate bowl, combine the pineapple, sugar substitute,
cranberries, orange, celery and nuts. Add this mixture to the
partially set gelatin and stir until blended.
5. Pour into large mold or individual molds. Chill until firm.
Do not use fresh or frozen pineapple in this recipe! It will not
allow the gelatin to jell.
NOTES : Carbs for pineapple not included in above total – adjust
accordingly
