The Northeast Iowa Tourism board wants to invite you to some special places in that section of the state. There is a lot of deer hunting in that area and you are invited to one of the local lockers where the deer are processed. You can see how a butcher makes the different cuts of meat and from which part of the animal they come from. For those that are a little squeamish about watching the process from the start you can start from where the deer are already cut up into different parts and then cut into the actual steaks and roast. You will also see deer sausage made in several different ways and the locker will share it’s receipt for the spices used. Most of the deer meat is made into sausage as it is the most versatile product taken from the animal. Deer meat has a very low fat concentration so it must be mixed with another source of fat. Usually beef fat is used as it is cheap and available anywhere. At the end of the tour you will be led to the store where you can purchase many different receipt books dedicated to the preparation of venison.

South Dakota Buffalo - Yummm

Of all the places to find a book of receipts Mount Rushmore South Dakota was not a place I would have thought to look. In the tourist center there was a book of receipts from the local people and it contained some wonderful dishes. Someone put some real time and effort into this publication as there were full color pictures of the dish and of the person who submitted it. Not all of it was what you would call local home town cooking either. There were some fancy deserts that would make the chef at the Hilton in New York City salivate. Of course there were local dishes too. There was your run of the mill pot roast with carrots and potatoes and your egg salad sandwich. There was an oriental stir fry with some spices that I had never heard of. There was a buffalo meatloaf that looked quite interesting. Now that’s one you would expect to see in a South Dakota cookbook. There are actually people there that raise buffalo much like farmers raise cattle for the food market. It is becoming more and more popular and can actually be found on the grocery store shelves nation wide now.

Finding recipes in strange places

Have you ever found a really good recipe in a really strange place? I found one in the Southwest Illinois Tourism booklet. Who would ever link tourism with homemade food? Of course Illinois is well known for it’s beef. Most of the best is grown in Iowa, but there are some large stock yards there. But I digress. The receipt I found was for a London Broil and let me tell you it was delicious. You start with a shoulder steak and you rub it with your favorite oil. You salt the meat and use course cut pepper and some special spices. You rub it all over the oiled steak and then broil it four inches away from the heat for four minutes on each side. When you take it out you tent it with foil for ten minutes. This allows the juices to redistribute themselves throughout the meat. After ten minutes you cut the meat on the bias which is the way to cut beef so it is the most tender. Served with fried potatoes it is a meal fit for a king. I like my potatoes sprinkled with seasoning salt and I like them to be red potatoes with the skin on. Paired with an appropriate wine you can even serve it as a romantic dinner for two…

I would never use cooking recipes at all, not if I could help it. I had dozens of cookbooks, but I never consulted the cookbook recipes.
