Serving Individual Wedding Cakes

When you get married, you have time to think about what you feel would make a perfect day for you and your husband or wife to be. There is a lot of planning to do, so hopefully you have a lot of time to think about what you want, and also that you can find what you want. Instead of going with a traditional wedding cake, you can go with something a bit different but every bit as elegant if you want to try something new. Some couples today are having individual wedding cakes served to their guests instead of slicing up one large cake. It’s a very neat idea, but it is more expensive in many cases.

Individual wedding cakes can be a lot of fun. You can go with something as simple as cupcakes if you are having a more informal wedding, or you can go with the expensive cakes that are made to look like tiny cakes. These look like miniature versions of the larger cakes that you may get for a wedding. These are more time consuming for your bakery to make, so you are going to have to pay a bit more to serve the same number of people than you would pay if you were getting a whole, large cake. However, these can look amazing, and if you want them, they are certainly going to make you very happy.

These individual wedding cakes can be much easier to serve to your guests. There is no cutting involved. Instead, they are served on a plate, sometimes they come on their own plates that can be returned to the bakery after your reception is done. Depending on how many people you have coming, many of the cakes can be placed on display before serving. If you have a large guest list, you can display some and then have the rest waiting in the serving or kitchen area to be served when it is time for cake.

One thing that puts individual wedding cakes above your more traditional wedding cake is that you can have a large variety of flavors. You could have as many different flavors of cake as you want to have, but do remember this can cause some confusion. Anything too exotic may not go over well with your guests. However, if you have three different flavors you like, and you can not choose or you want your guests to choose, you can have your cakes made in those flavors. You can also have each decorated in one theme while they all look different. These can be a lot of fun.

Don’t forget to order small cake boxes that will fit the size of your individual wedding cakes, as there are always going to be people that want some to go. Save one, or have one made special, just for the cutting of the wedding cake, and have one aside if you would like to freeze it for your first anniversary. Wrap it up tight and it will last until your first year and will probably taste pretty good too if you do it right.

Some people get annoyed to hear someone say at a restaurant that they are allergic to pepper, or strawberries or any of a number of other cooking ingredients, fruits and vegetables. To someone who doesn’t have an allergy, it can often seem unnecessarily precious that the smallest everyday things we take for granted, should cause anyone this much trouble. Some people wonder if allergy sufferers couldn’t just suck it up and brave it? Of course that’s what it feels like when you don’t really understand a problem. But here is a new report by the government that seems to give those irritable friends a reason or two to feel vindicated. The findings say that the study of food allergies has traditionally been done with shocking carelessness; in fact, most tests that find that you have a food allergy, are actually wrong. Most people with food allergy complaints actually have none.

Certainly, food allergies do exist – thay are a valid concept in themelves. Scientists are able to completely reproduce over and over again the allergic reactions that some people break out with when they come in contact with certain foods – and it can range from swellings, and rashes to conditions that make the heart stop. However, of all the reactions that people seem to have to various foods, genuine food allergies occur in only about 5% of all people – and this is in a world where one out of three people believes he or she has a food allergy.

Part of the reason this happens is, that the food allergies that people have as children, don’t always make it to adulthood. Just imagine what it would be like if as a child you had a terrible reaction to, say, peanuts, and you learned never to go near them ever again. You grow up, and as an adult, you still believe you have that allergy. In reality though, lots of food allergies don’t make it intact into adulthood. They just slip away for no known reason. This is one reason why so many people complain of food allergies that you don’t really have. They have it at one time, and unknown to them they stop having it.

Another reason why there are so many unjustified reports of food allergies is that most studies on the subject, are badly done – done with a lack of awareness of what it takes to accurately gauge the situation in a study. Barely 1% of all the studies done over the last 20 years meet the criteria for scientific rigor. For instance, most tests for food allergy use a couple of simple tests. One involves injecting a small amount of a certain food into a drop of blood, and then studying it for any antibody overactivity. In fact, this is a perfectly unreliable test that is wrong as often as it is right. You might as well not do it at all. The other way to test for food allergies is to let the person under study actually eat the food, to check for any reactions. But doctors don’t usually use this test, for fear of how serious the reactions could be. If you were a doctor trying to study a patient, you wouldn’t want to actually aggravate a terrible allergy just to see if it was real, would you?

There’s a major new study put together by the National Institute of Allergy and Infectious Diseases coming out that wants to set the record straight. The study has even found that the belief people have that you have fewer allergies if you were breast-fed as a child, and the belief that says that you shouldn’t give babies eggs for the first year, are nothing more than old wives’ tales. The thing is, food allergies are different from food intolerances. If you drink wine and it gives you a headache, that isn’t a food allergy. If you have lactose intolerance, that’s just because you don’t have the right digestive enzyme. It’s intolerance, not an allergy. Some people who get acid reflux in response to certain foods similarly think they have a food allergy.

And the whole antibody test makes no sense at all. There are lots of people who produce massive quantities of antibodies in reaction to certain foods, but still don’t break out. And antibodies to certain foods like peanuts are more able to bring about allergic reactions than others. One day, a proper food allergy test could come about that could help. For now, existing tests are pretty inadequate, and no one should come away thinking they have food allergy, just because they tested positive on one of the existing tests.

Fragrant Ways to Cooking Rice

Cooking rice is somehow perceived to be an Eastern thing. You have it in your kitchen, but it’s always at the back of the farthest shelf; when you actually get down to cooking rice, it gets pushed to the back of the plate. It doesn’t have to be that way though. Aromatic basmati can fill your kitchen and sometimes a whole street with an aroma that’s irresistible. For recipes that will really shine up your culinary reputation, here is a sophisticated way to start. But be warned, this one can be a really great way to get your children hooked on vegetarianism.

Let’s call this the spinach and Swiss chard basmati. This is a great way to start cooking rice for children, because it tastes and smells almost as good even when it’s cold in the lunch box. Here is what you will need :

A pound of Swiss chard, and half as much spinach. You’ll need a bit of extra virgin olive oil, an onion, three eggs, thyme, Rosemary, garlic, Gruyère cheese, and of course, you’ll need a cup of brown basmati rice. We begin by getting the rice ready. If you have a rice cooker, cooking rice becomes really easy. If you don’t, you could just steam it in boiling water.

Start with the Swiss chard. Cut off the stems, and strip out all the leaves. These leaves are what you will need. Put a large pot of water on the stove, put in say, a tablespoon full of salt, and boil the chard leaves in it. It’ll take about two minutes to tenderize the leaves this way. Take them out with a strainer right away, and cool them down in ordinary water. You could then chop them up to use later.

Next comes the part where you begin cooking the chard stalks in the oven. Get the oven ready by pre-heating it to 375 degrees. The chard stalks you got when you stripped out the leaves, you need to dice up. You need to stirfry them. But first, chop up an onion, and stirfry it in a heavy skillet for a couple of minutes. Add in the chard that you just diced, and throw in a teaspoon of chopped-up Rosemary, and a half teaspoon of dried thyme. Stirfry the whole thing for another five minutes, and then add in the garlic. Keep it going until the garlic is all nice and fragrant.

Now this is when you bring in the chard leaves and the spinach. Put that in along with the steamed rice and cheese. Stir in a little salt and pepper, and you’re done for now. This recipe requires cooking rice in an oven. Transfer everything you just stirfried to a baking dish, add in the three eggs all nicely beaten, sprinkle a little olive oil on it all, and put it in to bake. It should bake long enough to get firm and all nicely browned. It should take about 40 minutes.

This really is a recipe of its times. It does really well with advanced preparation methods. For instance, all that chopping and the boiling can be done up to two days before you actually intend to make the recipe. And once you have cooked it, it’ll keep in the fridge for about four days.

4 Fit-for-company Grilled Cod recipes

Way back in the day, cod fish got a very bad rap, nurtured by Mom or Grandma urging you to partake in that all purpose ‘clean out’, a heaping big spoon of cod liver oil. I never met anyone who liked this ‘spring cleaning’ routine. Many kids developed a life long distaste for this fish altogether, not realizing it’s the oil from the liver, not the flesh of the fish. Here, we attempt to dispel this unwarranted dislike with four absolutely delicious and economical cod recipes worthy of company dinners. No kidding. Read on, try them and see if you don’t agree.

Using a fish basket allows you to turn the fish easily, all in one piece, avoiding the problem of chunks breaking off and falling through the grill surface. If you don’t have one, and cook fish frequently, this kitchen gadget is worth buying. Each of these cod recipes serves 4, using a 6 ounce portion for each serving. This humble, bland tasting fish is greatly enhanced by the zippy sauces and marinades given for each.

1.In a 9×12 baking pan, distribute 1 Tb olive oil to coat the pan. Snip about ¼ c. fresh parsley, dice ½c. onion, and halve 2c. cherry tomatoes. Add ½ tsp thyme and ¼ tsp each of salt and pepper. Bake the mixture over the grill for just 5 minutes at 400 degrees. Add the fish on top, drizzling with 2 Tb. lemon juice. Cook in the pan for 10-12 minutes more, or until fish
flakes easily with a fork. Serve the fish with your veggie ‘sauce’ mixture with a thinly sliced piece of fresh lemon as the final garnish.

2.This cod recipe is reminiscent of Cajun country dishes and is simple and easy to prepare. Combine ¾ c. Of lemon pepper marinade with ¼ c. Worcestershire sauce. Marinade the cod in a resealable plastic bag, in the frig, for 30-60 minutes. Discard the marinade. Cut the fish into bite size chunks, dividing the fish among four skewers, alternating the fish with onion chunks, mushrooms, and red bell pepper slices. Sprinkle the skewers with 3 tsp. lemon juice, 3 Tb. Chopped, fresh parsley and 1-2 tsp. Cajun seasoning, to taste. Serve and enjoy.

3.Sprinkle 2 Tb. Fajitas seasoning over the fish. Cover and chill for 30 minutes. In a medium bowl, chop 2 ripe avocados, and 4-5 medium radishes. Slice 3 green onions, including the green tops. Add 2 tsp. Of hot sauce and 2 Tb. fresh lime juice and toss the mixture gently, but well. Reserve, Grill the cod 8-10 minutes on each side, over medium-high heat (350-400 degrees), until fish flakes easily with a fork. Shred the fish with a fork, then drizzle with another 2 Tb. fresh lime juice. Divide the avocado-veggie mixture between 4-5 10� flour tortillas. Top off with the fish and roll up the fajitas. This cod recipe has personality and is a favorite with kids.

4.This last cod recipe would make an Italian cook proud, with a zesty cilantro pesto served on the side. For the pesto, chop 1 ½ c. fresh cilantro, mince 3 cloves of fresh garlic, and shred ½ c. Parmesan cheese. Place in blender, along with 4 Tb. pine nuts and ¼ tsp. each of salt and pepper. Blend over low speed, adding ¼ c. olive oil, in a slow stream until blended well. Set aside. Combine 1/3 c. lemon juice, 1 minced clove garlic and ¼ tsp. salt. Divide the lemon juice mixture among 4 serving plates, setting individual ramekins, filled with the cilantro pesto, on each plate.

So you thought cod was, at best a boring entrée. Not so. This mild fish deserves a second look – from California fusion, to Cajun and Tex-Mex, with an Italian take on the delight of cod recipes – you’ve got a month of Fridays worth of budget-friendly, healthy meals to add to your cooking pages.

In today’s health conscious society, seafood has taken a premier spot in our daily menus. When you compare the cost of a steak or roast, seafood now ranks high, in terms of economy and nutrition. We find new and delicious alternatives to chicken and beef. Just five years ago, fish such as tilapia, orange roughy, swordfish and Chilean bass were not as readily available in the supermarkets. Now, we have a large and varied choice of seafood in the grocery stores. We’re also aware of the many health benefits of eating seafood. Nutritionists and doctors alike are recommending at least two servings be included in our menus each week.

Cooking seafood is so easy and convenient, you don’t even have to know how to cook in order to enjoy this healthy food from the oceans. Due to the current popularity of seafood, many companies are offering frozen seafood fillets in convenient single serving, microwaveable packets (usually four servings to a bag), with a number of gourmet sauces already in the bag! Nuke and serve! It couldn’t be easier.

Alternatively, when cooking seafood fillets, you don’t need to be an expert sauce maker should you buy a plain fillet. There are a number of excellent bottled sauces, salsas and easily made sauces in packets – like hollandaise – with which you can adorn your fillets. The simplest of garnishes is a thinly sliced piece of fresh lemon, topped with a sprig of fresh dill or tarragon for an elegant meal presentation.

When it comes to raw shellfish, cooking seafood is almost foolproof. You get a better price on raw shellfish than an already cooked product, either fresh or frozen. It’s a matter of labor costs. While you do have to do the cooking and shelling, the savings is significant enough to make some pricey shellfish affordable and worth the extra labor. In the case of cooking seafood of the shellfish family is so easy, even a child can do it, with proper adult supervision. How can you tell when shellfish are done? With shrimp, crab or lobster, it’s done when it turns a bright pink. With hard-shelled seafood, such as clams, mussels and oysters, you simply boil them in a quantity of water. When the shells open, they’re done. Those that do not open, should be discarded.

Fresh or frozen, cooking seafood fillets in the microwave is both the quickest method and produces a juicy result. Just follow the instructions on the packet, or ask your seafood counter staff for microwave times. It’s far easier to over cook in the frying pan, under the broiler or on the grill.

When cooking seafood on a shishkebab, such as shrimp skewered with veggies such as pineapple, mushrooms, bell peppers and onions, it’s better to go with the already cooked product. The veggies will cook so quickly, under the broiler or on the grill, that you’re essentially just warming the shrimp as the veggies caramelize a bit. Again, quick and easy.

Cooking seafood is so easy, with a versatility not found in most meats, not to mention the healthy and delicious results, it’s an economical menu choice, you really don’t need to be a cook to enjoy your two servings a week!

Many decades ago, if you didn’t have the time to spend baking homemade bread, the supermarket choices were pretty dismal, a loaf of bread was either the spongy, white stuff kids used to squeeze into an unappetizing ball with a few drops of water, or ‘French’ bread that wasn’t the real thing, but just a reasonable visual facsimile of what French bread should be. Certainly, today, that’s no longer the case. You can find breads you never heard of, at virtually every supermarket.

Oh, how I wish I’d invented the bread making machine! Whoever came up with the idea was a visionary of culinary appliances. When this wonderful appliance came on the market, I let my husband know that this little kitchen gadget would be welcomed enthusiastically at any upcoming gift occasion! Lo and behold, when my birthday rolled around, there it was, beautifully wrapped, with an accompanying book of bread machine recipes. Since then, I’ve created many astonishing breads. Admittedly, not all were great successes with the family, but probably 90% have garnered applause.

When I first started using the bread maker, I meticulously followed the instructions of the book’s bread machine recipes, thinking that any deviation might just ruin the bread. The results were always good. One day, browsing in the bookstore, I spotted another book of bread machine recipes on the bargain table. Eager for some new stuff to try my hand at, I bought the book.

By the time I’d gone through the second book, I realized that there are only so many variations on bread dough and whatever you chose to add, be it fruit bits, nuts, cheese or vegetables, the constant among all the bread machine recipes was that a certain ratio of dough to additions was maintained. This ratio is also relative to the wetness, dryness and weight of what you chose to add. For example, I found that you can hardly add too much cheese … if you love the taste of cheesy breads and the recipe calls for 2 cups of cheese, you can add 3 cups if you like, without altering any of the other ingredients and amounts. On the other hand, too many nuts or dried fruits can make for a loaf that doesn’t rise properly. In short, I discovered that bread machine recipes were pretty flexible, mostly a matter of a little experience, some imagination and a dose of common sense.

Almost every bread machine has push-button settings, allowing you to set the size of the loaf, the type of crust, specify whether your concoction includes fruit or nuts and whether you want to stop at the ‘dough’ stage or go on through to a completely automatically-baked bread, ready to eat. Stopping at the dough stage allows you to make authentic pizza dough, or a rolled cinnamon loaf.

You can see how using bread machine recipes, modified with ingredients that suit your tastes perfectly, can revolutionize your available choices in freshly baked breads. As I said, my own inventions have, for the most part, met with approval. I’ll tell you which was, hands down, my worst experiment: marinated artichoke heart and diced tomato bread. Not good. My thinking was that these favored ingredients were good in salads, so why not? Now, my salad has a side of bread. Guess there’s no such thing as a bread salad!

• Keep placing the balls on the parchment
