The Right Way to Charcoal Barbecue

Monday, May 19th, 2008

When I was growing up, we had a gas grill in the backyard. My parents thought it was a great convenience. We could go outside and barbecue something without actually having to bother with charcoal. We never even used a charcoal barbecue. It required a lot of set up, was a little bit difficult to light, and it took forever. I have to say that I ate some pretty good food that came off of that gas grill. My mom would make this wonderful salmon steak that she would wrap in aluminum foil and cook up when it was warm outside. Still, since I got my own charcoal bbq grill, I have learned what real grilled food tastes like. For all of its advantages and uses, natural gas just can’t compare!

A lot of people don’t like the taste of food made on a charcoal barbecue, but most of these folks have never had it done right. Most everyone who barbecues makes the same mistakes.

I find the trick with fried rice is to keep it really simple and traditional – just some really fresh and fluffy eggs, onion, bacon or Chinese sausage, ginger and some spring onions.

Cookery of West East Africa

Wednesday, May 14th, 2008

East Africa looks out over the Indian ocean and there is a strong culinary bond between West Africa and India. Indeed, East Africa has long been a landing point for vessels engaged in the spice trade, from the Indians of 4000 and more years ago through the Romans, Arabs and European colonial powers. There is therefor a strong Indian influence in the cookery of West East Africa (especially Swahili traditions) and spice-favoured curries and pilaus. Bread is also more of a staple in the West African diet than it is in much of the remainder of Africa and you get many variations of pan-fried and flatbreads.

Bake Your Pizza Crust

Wednesday, May 14th, 2008

It would be best if you can bake your pizza crust first before you add on the toppings and sauce. There’s one good reason for doing this. If you bake the lot at one and the same time, you may end up with a pizza that has overcooked toppings, burnt cheese and an undercooked, flat crust. Of course, you should not bake your crust fully the first time so that you won’t end up with a pizza that has a burnt crust after your final baking stage.

Successful Herb Garden

Monday, May 12th, 2008

There are three main ingredients to a healthy and successful herb garden
sunlight, soil and pruning. It simply is not true that herbs will grow anywhere in any soil. Herbs require healthy well drained soil to grow, and poor soil or poor drainage lead to failed gardens. Sunlight is a major factor in a successful herb garden. Full sun is a must if what you want are healthy full lush herbs. Shade or lack of sun leads to “leggy” or long stemmed plants with poor foliage and little flavor. To get the full lush foliage, fragrance and flavor of exceptional herbs you need plenty of sunlight.

Val de Loire

Monday, May 12th, 2008

The Loire Valley, or Val de Loire
, is a large wine producing region in France that ranges from nearly the center of the country, west of Burgundy, all the way to the west coast. It is a vast area encompassing many different appellations which produce all types of wines, from light-bodied whites to full-bodied reds. For some reason, besides a few notable producers this region has remained relatively invisible to the great majority of the wine world. While well versed wine enthusiasts know and love the Loire well, your average wine drinker in the United States knows little of the region.
