Barbecue, like apple pie, is an all-American favorite. Enjoyed since the 1950′s, thoughts of backyard barbecues bring back memories of fresh cut summer grass, Dad’s juicy burgers, and Mom’s delicious potato salad and fruity punch, of friends and family sitting around the picnic table, munching on savory hot dogs, fresh and juicy from that beautiful grill that sat there faithfully, year after year.

One thing to remember about low carb cheese cake is that there is no crust, at least not in the version that I have made. Some in the later stages of the diet may be able to add a low carb crust to it, but when someone is in induction or the early states of ongoing weight loss, the crust is not an option. However, that is the only thing missing, as this is something that is sweet and tastes like real cheese cake for the most part. I found it immensely satisfying when I had the urge for something a little different.

I thought I was making healthy choices by staying at home to eat instead of going to restaurants, but I guess that depends on how I prepare my meals. For example, I like to grill meats and vegetables in butter and put heaps of dressing on my salads. That obviously doesn’t help my waistline, so I have to make a deliberate effort to change to low fat cooking methods.
Read on to find out where I discovered low fat cooking.
