One of the duties of a good housewife is to appreciate the importance of cooking and its close relation to domestic happiness. This opinion prevailed even in the days of Con­fucius. We learn from the Classics that Con­fucius was particularly fastidious as regards food for we are told that:�

1. He refused to partake of wine and dried meat bought in the market.

2. He refused to eat meat which was not cut properly nor what was served without the correct sauce.

3. He refused to eat anything badly cooked or not in season.

4. He liked his rice polished white and his meat minced finely.

Had there been such conveniences as are now available�the equipment of a modern kitchen�and had there been properly con­ducted schools of cookery where the necessary knowledge might be acquired, Chinese house wives in ancient times would have been able to maintain satisfactorily a high standard of culinary art in their households. The modern housewife is more fortunately situated. She can employ a good cook and supervise his work, thus doing away with the necessity of purchasing food from outside herself. She can procure a mincing machine to mince meat to any desired fineness; she can buy perfectly white machine-milled rice and she can easily procure any sauce to suit any taste thanks to the skill and ex­perience of modern organisations. In fact she has everything in her favour these days; all she has to do is to learn how to cook.

So you want to be a chef!  The culinary arts are a great choice for a career. It helps if you have a previous interest in cooking.

Most people that decide that they would like to explore the great field of the culinary arts already seem to have the pre-disposition for it. Of course, that is not always the case.

Some chefs come into the profession later on in life. Of course, if you want to be at the top of your field, you should at least know that there are quite a few things that you should ask yourself first.

What it comes down to is that not everyone can be a chef. Before you even consider going any further, you should ask yourself the following questions first.

* Am I creative?

Creativity is necessary if you want to stand out as a chef. Often a meal is made all the more interesting by the way it is presented on the plate.

Creativity will also be necessary in dealing with your staff’s problems. One thing a chef is responsible for is coming up with new and exotic dishes. A great sense of creativity can help with this and also with finding new ways to prepare old dishes.

Chocolate Fudge

My mother prepared mainly comfort foods. These were the foods that my father preferred. Her specialties were pot roast, baked chicken, wonderful gravy and chocolate fudge. After many years of trying I have finally mastered making gravy that is as smooth and rich as my mother’s. I have not been able to duplicate the chocolate fudge. No matter how many times I try my mother recipe it seems that the texture is never right. Her chocolate fudge recipe includes boiling the ingredients and then beating the fudge by hand until it thickens. I have watched her do this hundreds of times, yet I cannot master the timing.

BBQ Sauce

I have a friend who lives in Australia, and we love to send food and other interesting items to each other. We try to send things that we can’t get in our own countries, and some of the things she has sent me were rather interesting. If you ever get the chance to try musk sticks straight from Australia, I urge you to turn heel and run away as fast as you can. If you want to know what they taste like, just go get a bottle of perfume and spray it in your mouth. If you like that, you’ll like musk sticks. Most stuff has been good though. I have sent many things that my friend likes, but her favorite by far was the BBQ sauce that I had sent her last year.

Hot Cooking Sauce – to add flavor to your quick meals

Our middle son that loves everything extra spicy grabbed the bottle of hot sauce to have at the table. We said grace and began passing the wonderful smelling dinner. Our middle son poured extra hot sauce on his helping and took a big mouthful. His eyes welled up and his face turned bright red. It took him several minutes before he could speak.

At first we thought he was giving his brother a hard time, and then we realized that he was not joking. I tasted the food and thought that it was hot and spicy, but very good. My husband looked at the bottle of hot sauce. I had bought the extra extra hot sauce! It was the double hot dose.

Our middle son recovered after a piece of bread and a glass of water. I do not think he will ever use hot sauce again without first reading the label.

Chocolate Brownie Recipe

There are many variations on the classic chocolate brownie recipe. Chocolate chips, white chocolate chips, carob chips or peanut butter chips make a richer tasting brownie, especially popular with kids and chocolate fiends. Peanut butter chips produce a chocolate brownie with a creamier taste. When using peanut butter chips, you’ll need to decrease the baking time by a few minutes. There are also dark chocolate bars with a high cocoa content (up to 70%) that are velvety smooth and rich. Just break a 100-gram bar into small chunks and stir into the batter before baking. Walnuts or pecans are good in holiday brownies, as are marshmallow cremes.

However, I will say that chocolate covered potato chips, along with many other sweets are much cheaper to make on your own. Once you have the equipment, you can whip-up as many delectables as you please. As far as the chocolate potato chips go, this is how I do it. You first slice potatoes into chip-sized pieces.

After salt, black pepper is the world’s most used spice. Black pepper is originally from the Malabar region of India and comes from the unripe berries of the pepper plant. After being scalded in water and dried, the berries become hard, wrinkled and black and are called peppercorns. Two of the best types of black pepper are Indian Malabar and the more tasteful and expensive Tellicherry. Once ground, black pepper is releasing aroma and flavor. It is better to use a pepper mill to grind peppercorns only as needed, and choose either a fine or coarse grind. Some meals, like beef or fish, require a very coarse grind. More delicate dishes, like salads or sauces, benefit from a finer grind.

Cooking for a cause

The other day I went through my cookbooks, to see if I could weed some out, because I have too many to mention. It’s hard getting rid of a cookbook, especially one with a few recipes in it that you’ve come to love. But I’ve scanned the recipes I need to keep forever into my MacBook. However, there were an even dozen I couldn’t part with. These are books I turn to time and time again, even though I consider myself somewhat of a gourmet chef. Morgan Freeman’s COOKING FOR A CAUSE was one of the books I kept. Not only does Mr. Freeman’s book help out the people of Grenada, who suffered during Hurricane Ivan, but it can help you out in the kitchen as well. Friday last I made the “Classic Conch Ceviche the Cayman Way” which you can find on page 47. It was delicious. I’ve also done the “Arroz Con Pollo” a Cuban dish from the Kitchen of Daisy’s Grandmother.” And that’s the rub, is this classic Caribbean food or is it another book of recipes from fancy restaurants. Does it matter? The recipes make delicious meals with a distinct Caribbean flavor, which makes Mr. Freeman’s book fit in nicely with my dozen Caribbean keeper cookbooks. And I have to give Mr. Freeman a hand for doing something for the people of Grenada. I was hunkered down in Trinidad, thanking Neptune the hurricane didn’t come for me. But it’s sad it went for others. This is a good cookbook, one which will help you turn out delicious meals, plus it’s for a great cause. Two thumbs up.Anyone could find it on amazon.Cook for a good cause.

Lemon Pepper Chicken

She had bought boneless skinless chicken breasts to serve. I asked her what she would do with the chicken if my husband and I were not there. She said that she would season them with lemon pepper and grill them.
