The making of top-quality wines is absurdly simple, yet not quite so simple that we can be careless about it. Too many people are still following granny’s methods fermenting in uncovered vessels, allowing fruit mixtures to ferment of their own accord, leaving bottles of fermenting wines corked loosely (the three main causes of ruined wines), while others are still preparing their fruits and other ingredients in a manner which nine times out of ten produces cloudy, acid wines that more often than not find their way down the drain. If readers’ previous attempts have not been up to expectations there is a reason. This will be found within these pages as well as the essential, yet simple, information that ensures success in making what is, surely, the finest home product on earth.
In my lectures and in my wine articles which appear in magazines, I repeatedly make it clear that I am an advocate of simplicity. There are many highly complicated scientific and chemical aspects underlying amateur wine-making. A few home operators begin to dabble in these, so that, to them, wine-making becomes a grueling test of knowledge and skill. Expensive laboratory equipment becomes necessary as does some experience in laboratory techniques and from then on all pleasures are lost in a worrying maze of technicalities.

As a first step in our study of cake decorating, we will examine the methods and materials of icing a cake. The icing or frosting serves as the setting for the decorations and is actually the initial step in the decorating process.
Frosting helps keep the cake moist. It is important to have your cake cold and free from crumbs before it is frosted. When frosting layer cakes, lay four strips of waxed paper on a plate or doilie as illustrated. Invert one layer, spread filling evenly over this, then place the second layer on top and frost. If you are using a thin icing, you may start by pouring the icing on the top and then work to the sides. In using a heavier icing such as a marshmallow or butter-cream, we prefer to start on the sides first and then go to the top of the cake as illustrated. The spatula may be dipped in hot water if a very smooth effect is desired. Here are a few effects that may be obtained by following the simple instructions.
The spatula is held at the center of the cake. Turn the cake slowly with the left hand and move the spatula gradually to the outer edge of the cake.

If you want something you can use to cut meat and cheeses, you should make sure you buy good quality plastic cutting boards. Though these boards may not look as nice in your kitchen as the wooden cutting boards, they are by far safer and will last a lot longer. I have found that the plastic boards take more of a beating than the wooden boards, and can very easily go into the dishwasher. They will not warp in the dishwasher, and you may find the last a lot longer than any wooden board ever could.
