I tried to explain to my god child that I could not do her wedding cake. She told me that she did not want the traditional wedding cake with tiers and fancy piping and flowers. She wanted several individual layer cakes of different flavors and fillings. She was going to have the cakes displayed on a table with different height cake plates. She wanted the cake that she and the groom would cut to be her favorite flavor. This sounded like an interesting idea for a wedding cake, but I was still leery about doing it.

Valentine’s Day is a wonderful time to serve a special home cooked meal to that special person. This special menu should start with a lovely salad or appetizers, and include a special main dish like a steak or a Cornish game hen.

This special romantic menu consists of a shrimp cocktail, fruit salad, Cornish game hen, grain pilaf, steamed broccoli, cauliflower, and carrots. For dessert, a chocolate mousse finishes things up.

First, the cocktail sauce for the shrimp cocktails is stirred up and allowed to chill. The ingredients in the sauce are equal parts of chili sauce and catsup, with a little horseradish added. Add a dash of lemon juice and Worcestershire sauce for a splash of flavor. This sauce can be chilling while the rest of the food is prepared. Unless one intends to make candy to sell, or on an unusually large cale, no large assortment of tools is necessary. In these days most kitchens contain everything in the line of tools that are absolutely indis­pensable, but a few suggestions along these lines will not come amiss.

For use in boiling sugar a granite kettle is the best, but those made of brass, copper, or tin may be used.

Candy tongs and candy dippers, although not an absolutely necessary adjunct, are, nevertheless, very handy; but if not convenient an ordinary silver fork and spoon will answer the purpose.

Wooden paddles or spoons are the best for stirring. Oiled or waxed paper should always be on hand and freely used. On the judicious use of FLAVORINGS. flavors depend many varie­ties of candy. If it were not for flavors there would be but few varieties. It is essential, therefore, that the amateur learn to make the different flavors. Of course, like every­thing else, they may be purchased, but there is far too much adulteration practiced by manufac­turers.

Most of the time there are free drinks, or half-price drinks, for those who will visit an establishment during certain hours.
