What is Dieting?

Dieting is the practice of eating (and drinking) in a regulated fashion to achieve a particular, short-term objective. This is distinct from the more basic concept of “diet,” which addresses the longer-term and more generic habit of nutritional consumption. For example, a vegan eats a diet completely without animal products, including milk; but while this is a diet, it is not “dieting.”

The most common objective of dieting is loss of excess body fat. Some dieting is prescribed to achieve particular medical objectives, such as sodium-free diets, bland diets and soft food diets, while some dieting is actually designed to increase body fat and/or muscle weight gain.

Crème caramel, known as flan in the US and Spanish speaking countries, is a kind of rich custard dessert with a layer of soft caramel on top. Both names are of French origin. The dish has spread across Europe and the world, and is known as ‘flan’ in Spanish-speaking countries. In the United States, the dish is now best-known in a Latin American context, so is called flan; in Europe, it is generally known as crème caramel, although in the UK it is sometimes colloquially called “caramel custard”. Food historian Alan Davidson remarks:

“In the latter part of the 20th century crème caramel occupied an excessively large amount of territory in European restaurant dessert menus. This was probably due to the convenience, for restaurateurs, of being able to prepare a lot in advance and keep them until needed.”

Definition of Espresso

The qualitative definition of espresso includes a thicker consistency than drip coffee, a higher amount of dissolved solids than drip coffee per relative volume, and a serving size that is usually measured in shots. Espresso is chemically complex and volatile, with many of its chemical components degrading from oxidation or loss of temperature. Properly brewed espresso has three major parts: the heart, body and, the most distinguishing factor, the presence of crema, which is a reddish-brown foam which floats on the surface of the espresso. It is composed of vegetable oils, proteins and sugars. Crema has elements of both emulsion and foam colloid.

First know it all comes down to calories consumed and burned. With your doctor, establish your safe calories-per-day to get to your goal: lose weight fast. Get a calorie counter, and stick to your limit.

Half of the challenge is knowing what you’re doing and why, before beginning your diet. Make an honest assessment of your current diet. Do you drink a lot of soda? How about salty junk foods? Is your weakness fried and fatty foods? Maybe even all of the above.

Junk and fatty foods are obvious and significant obstacles to losing weight fast. It makes sense to eliminate these from your food stocks. Excess refined sugar makes you cranky, moody and turns to more fat. Too many calories. Salt causes you to retain water. Excess water weight is difficult to estimate, and only discourages you. If you’re cranky, moody and discouraged, it’s more likely that you’ll give up on your goal.

Designing Birthday Cakes

When I was a kid, for instance, my grandmother would spend a full day on one of the cake designs she worked alone, by hand, and to exhaustive degrees. She made hand crafted frosting roses, folding the layers of petals against each other to create remarkable and delicious three dimensional delights that adorned her cakes. She also hand-tubed the cakes, covering where icing would be on a plain, undecorated cake, with thousands of piped stars. For example, she made a cake that looked like a newborn baby’s sleeping coat. When she finished squeezing stars to cover every inch, the cake looked more like a real hand-knit sweater!

The wedding cakes that she and others who specialized in cake designs completed were also unique, time-consuming works of art that today seem simple and plain, though, next to the cake designs of the classic and most luxurious cake decorators. I have seen or tasted (or both) some of the most unusual kinds of cakes. The one with a full sheet of icing wrapped around it as if the icing were material of cloth is the one that still impresses me. Then there are the cake designs that always remind me of good old Martha (as in Stewart): they are graced by falls of flowers that have been dipped in egg white and rolled in sugar, making them not only beautiful (sparkly) to look at but edible.

My grandmother is a very stubborn woman. She remembers when my grandfather drank supplement drinks prior to his death and how awful he said they tasted. We tried to explain that there is a greater variety of meal replacement drinks available today, but she wanted nothing to do with them. My uncle decided that he would trick my grandmother into using the meal replacement drinks. She has always liked milk shakes and malts. She does not have them very often because she is borderline diabetic. One day my uncle got a glass from the local Dairy Queen and filled it with strawberry flavored meal replacement, which he had blended with fresh berries and ice. He brought the supplemental drink to my grandmother and she drank it all. She thanked him for bringing her the treat. When she had finished it he told her what she had just drank. Initially she was angry with him for tricking her, but then decided that he could get her a supply of the meal replacement drinks.

I’d been to Germany years ago and was able to purchase real German chocolate so I wondered why it wasn’t a requirement when making a cake with the same name. It seems that the recipe itself never utilized actual chocolate made in Munich or Hamburg. It was actually the brand name of the chocolate originally used when the German chocolate cake was first invented.

Chocolate is produced from the beans of the cacao tree, which originated in South America, and now grows in Africa, the West Indies, the tropical parts of America, and the Far West. Used as the main ingredient in numerous recipes, chocolate constitutes one of the most loved materials known in today’s food world. Children and adults both appreciate chocolate’s unique aroma, taste, color and texture and prefer it in comparison to other foods.

The cacao beans, from which chocolate is produced, are large pods -once harvested, both the pulp from the pods and the bean are allowed to ferment in the sun. The pulp evaporates and the bean develops its chocolaty flavor. Later, the outer skin is removed and the beans are left in the sun for a little longer or roasted. Finally they are shelled and the kennels are used for making cocoa and chocolate.

Some types of pasta are the agnolotti, anelli, bucatini, cannelloni, capalletti, ditali, elicje, farfalle, fettuccine, fusilli, lasagne, linguini, macaroni, penne, ravioli, rigatoni, spaghetti and tagliatelle. Many can be found in both dried and fresh forms, but unless you have access to a good, Italian delicatessen, it is probably not worth buying fresh unfilled pasta, even from supermarkets that sell high-quality tortellini, capalletti, ravioli, and agnolotti.

The Arabs were the innovators in adding flavors to their coffee as others in the Middle East soon followed. The worlds finest chocolates are not sold out of some drug store, unless perhaps you live in Belgium. To find the worlds finest chocolates, you have to search far and wide, but the search is worth it. I live in San Francisco, when I am not working as an international chocolate investigator (my spare time hobby). Many people around here like Ghiradelli chocolates. They think that they are the worlds finest chocolates, and I have to admit that they are really quite tasty. Nevertheless, these people are all mistaken, as there  are far better chocolates.
